ON MARRIAGE

Today we are celebrating 6 months of marriage! I know, it's only 6 months....it's not like a year or ten years.....but whatever. It's still reason to celebrate!

First off, I'm very grateful for Spencer.  I think it's pretty cool that he loves me all the time no matter what.  I love that he loves to serve me.  He takes the time to clean, cook, and listen to me.  One of my personal favorites- if he wants to play on the Xbox, he always asks "do you want to cuddle or talk first?"  I love it! He knows I love to talk, and that is one (big) way that I feel close to him.  So for him to ask me that is a big deal!  He helps me grow and reminds me of the things that matter in life.  He also reminds me to have fun! There is always something to smile and laugh about, even though we're figuring out our future with many important decisions.

He is a great husband and I love him so much more than I did 6 months ago.  Isn't it awesome how your capability to love someone can grow throughout time?  I say awesome because I honestly can't think of another way to describe it. It truly is awesome.  I can't wait to see what the future will bring.

HOLIDAY

Since today was a holiday, we thought we'd make the most of it and drive to Idaho Falls for a few hours.  We just went to the mall but it was still fun to get away from our apartment and every day life.  Overall, today was a great day!  On the way to the mall, for some reason we talked about food the whole time (crazy right??).  To be more specific, we shared details about different textures of food that we like and don't like.  I love how S and I can talk about different textures of food for 30 minutes and still be completely entertained! So maybe we talk about really random things....but I love it!

So we had fun at the mall, spending most of our time in Barnes and Noble.  I think we spend the most time at that store every time we end up at the mall.  We loved looking at books together.  My favorite part of the mall- our photo booth picture. Cheesy? Maybe, but I really wanted to do it with Spence.  I love photo booths and the pictures you can get! And the spots all over..... that is paint that somehow ended up on my scanner....

We stayed in Idaho Falls for a good amount of time until we were both ready to go.  Driving home in the sunset listening to our favorite tunes was so fun (and don't forget the dance parties).  I started making dinner when we got home, tonight we enjoyed my infamous margarita pizza! Except this time I made it into BBQ chicken.  Seems like any day we have homemade pizza is a special day :)

To finish off the night, we went over to our good friends Alisa and Brandon Pelfrey's apartment and we had FHE together.  Pelfrey's did the lesson and we brought treats and the game Farkle!  We had fun with them and are planning to keep going with joint FHE's!  Great holiday for the Flitton's!  Now back to school tomorrow.....

CHILI CON QUESO BITES

Fun Fact: I'm a huge fan of preparing and making meals (especially breakfasts) ahead of time, so that I can simply grab and go!  My mom did this a lot for me when I was in High School.  She had breakfast burritos and breakfast sandwiches pre-made and frozen so that it would take less time to get me out the door.  I always appreciated that, and it really was convenient for me.  So today I did the same thing for S and I....it really is worth it to make and plan ahead of time!

I got this recipe for "chili con queso bites" from a Relief Society thing.  They are AWESOME for grab and go! So yummmyy!

Here's the recipe:
4 eggs
1/2 cup thick/chunky salsa
1/4 cup flour
2 tsp. chili powder
1 1/2 cups shredded cheddar cheese
1 green onion, chopped (about 2 T.)

Preheat oven to 400. Grease 24 muffin-pan cups.  Set aside.  In medium bowl, mix eggs, salsa, flour and chili powder. Stir in cheese and onion. Spoon about 1 tablespoon of mixture into each cup.  Bake 10 minutes or until golden brown.  Serve warm or at room temp. with sour cream and additional salsa, if desired.  Makes 24 (I only got 17) appetizers.
Tip: Appetizers may be frozen. To reheat, bake frozen appetizers at 350 for 10 minutes or until hot (I even like mine cold).

Eggs first
I used this salsa from Target
Eggs, salsa, flour, chili powder

I chopped about this much of the green onion
Stirring in cheese and onion

Everything added
Before........
....after! I like to top with a bit of sour cream.  Enjoy a perfect grab and go breakfast!

LAST SEMESTER

Today was the first day of our last semester at BYU-I.  I'm already feeling a bit nostalgic!  I plan to make the most out of this semester and enjoy every moment!  It's so fun that S and I are graduating at the same time. Whenever we tell people that, they are amazed and saying that's so convenient! And it is!  I can't wait for this last semester and we both are excited to see what the future brings. For now, I'll be in class on the north side all day, while he's in class on the south!

REMEMBERING CHRISTMAS

As we drove back to Idaho today, Spence and I were reminiscing about our fun Christmas vacation.  We're glad to be back in our little (emphasis on "little") apartment together, but we miss our friends and family already.  We had such a great break, it's hard to leave sometimes! I wanted to take a second to remember and record our 2013 Christmas in Utah....

BLOGGING BANDWAGON

I never wanted to start a blog.  I laughed at people who suggested that I start one.  Well, now that I'm hitched and S and I live far away from our 3 families, I thought I'd jump on the bandwagon (just to see how it goes).  So, follow if you want...I won't be offended if you don't.  This blog will be a record of the beginning of the rest of our lives together! P.S. the two previous posts on this blog were for my religion final this semester. Read if you want, I find the quotes pretty inspirational!
